One floor below the street, beneath the original 19th-century structure of Hotel Plaza Herrera, a single door opens onto vaulted stone, restored brick, and one long table set for as many as twelve. A wall of more than 900 wine labels closes off one side. Candlelight runs the length of the table. The room holds the kind of quiet that only exists below ground, in a building this old.
Some call it the bunker. The name fits. This is private dining in Casco Viejo — set one block from Plaza Herrera, and far enough below the street to feel the century in the walls.
A dining room can be decorated. THEcellar preserves history in its walls — stone, restored brick, a wine collection of more than 900 labels — and sets the table in the middle of all of it.
THEcellar sits beneath the hotel’s main floor, carved from the building’s original foundations and left without the surface gloss of a hotel restaurant. The vaults are stone. The brick is restored to the period. The light comes from candles down the table and low warm fixtures set into the alcoves. One long table runs the length of the room. Behind glass on one side stands the wine wall — more than 900 labels drawn from Panama, Latin America, and a curated European list.
An independent air-exchange system conditions the space, which makes the room cigar-friendly without ever asking the guests who don’t smoke to share in it. It does something else, too. A conversation held in THEcellar stays in THEcellar. The sound is insulated, the air is its own, and nothing leaves the room unless it is carried out.
A dinner at THEcellar begins weeks before anyone sits down.
The executive chef of Hotel Plaza Herrera works directly with the host — the group, the occasion, the season, the allergies and preferences, the rough length of the evening. From that conversation the kitchen drafts a menu built for that night alone, and the host shapes it from there.
On the evening itself, the maître d’ belongs to the table and no other. Wine runs through the meal — the sommelier’s pairings, the host’s choices, or a bottle pulled from the wall on request. The courses follow the rhythm of the room rather than a service clock; the toasts, the speeches, the long pauses are built into the timing instead of interrupting it.
The room is yours for the whole evening. There are no other seatings.

Panamanian dishes that tend to surprise visitors — ceviche of corvina, sancocho, sea bass with coconut rice, ropa vieja — sit beside the plates the table already knows: handmade pasta, grilled steak from the hotel’s smokehouse program, seasonal vegetables, desserts made with intent. Dietary restrictions are built in at the level of the recipe, not patched on as a substitution, so the table dines together rather than around one another.
The hotel sits on Plaza Herrera, one block from Iglesia de San José, a few minutes’ walk from the seawall at the edge of Casco Viejo.
