Custom Event Menus at Hotel Plaza Herrera

A menu is not a list of dishes. It is a reading of the occasion.

Every gathering at Hotel Plaza Herrera arrives with its own reason — a marriage, a milestone, a board brought together, a family gathered after too much time apart. The guests are different. The mood is different. The thing being marked is different. The menu should be different too.

That is the premise of THEcatering, the hotel’s in-house culinary program. Nothing is pulled from a standard package. Each menu is built for the celebration it belongs to, and only that one.

A Menu Shaped for the Occasion

No two events here share the same menu.

Some occasions want a formal multi-course dinner, paced and plated. Others move through shared plates, cocktail receptions, tasting stations, or family-style service that pulls conversation across the table. The format is never chosen from a sheet. It follows the event, and the feeling the host is trying to create.

Before a single dish is proposed, the kitchen learns the occasion — who is gathering, why, and how the host wants the evening to feel. The recommendations grow from that, then get refined with the host until the shape of the meal is right. What finally reaches the table feels connected to the event, not selected near it.

Warmth with discipline. Every detail by design.

A Single Menu That Tastes of Both

The kitchen draws from two sources at once — Panama itself, and the international traditions that have long shaped how the country eats.

Local ingredients and regional preparations move through the menus — seafood from two oceans, tropical produce, Panamanian specialties set beside more familiar dishes, seasonal where the season decides. International influences sit alongside them without a seam. The aim is never two cuisines sharing one table. It is a single menu that tastes of both the place and the people gathered in it.

A guest should leave having tasted where they were, not only what they ordered.

The Room Changes What the Meal Becomes

Where a meal is served changes what the meal is.

THEcellar, one floor below the house, holds private dinners, executive gatherings, and wine-focused evenings where intimacy is the occasion — a single long table beneath vaulted stone, a glass wall of more than 900 labels at its side. The interior courtyard opens the meal to the preserved architecture of the building, its proportions undisturbed, the sky directly above. THErestaurant carries the full weight of the kitchen on the ground floor, and THEmartini-bar holds cocktails and arrival as the light over Plaza Herrera turns to evening. When an occasion calls for it, THEapothecary adds another layer — scent, ritual, and house-made touches woven around the table.

Larger celebrations move between these spaces as the night unfolds, so guests experience the house in sequence rather than from a single seat. In a full-property buyout, the kitchen serves the entire house — courtyard, cellar, restaurant, martini bar, and the nine suites above — as one continuous evening.

From First Conversation to the Table

A custom menu is built in conversation, not handed across as a choice of three.

It begins with the occasion rather than the food. The host describes what is being marked and how the evening should feel; the kitchen listens first, then proposes. From there the menu is shaped course by course — adjusted for the guest list, the season, the room it will be served in, and the pace the host wants the night to keep. Nothing is fixed until it feels right to the person hosting it.

The same coordination carries through the event itself. Service is timed to the room and the moment, so courses arrive when the evening is ready for them rather than on a fixed clock. The planning disappears into the night. Only the meal remains.

The Details Most Kitchens Treat as Exceptions

Unreasonable hospitality lives in the details most places overlook.

Dietary needs, allergies, cultural and religious traditions, a family recipe carried for three generations — these are not handled as exceptions to the menu. They are folded into it. Sometimes that means adapting a single course. Sometimes it means building an entire evening around one tradition, one dish, one memory the host wants the table to taste.

The details are not small. They are the architecture of ease. The kitchen does not need to be reminded.

The Pour Belongs to the Menu

The beverage program is shaped to the menu and the occasion — never bolted onto it.

Wine is drawn from the hotel’s cellar — more than 900 labels across Panama, Latin America, and Europe — with pairings arranged for private dinners, tastings, and the multi-course evenings that move through the house. For weddings and milestone celebrations, custom cocktails can be built around the event itself: a drink that belongs to this gathering and no other, still in conversation with the rest of the kitchen. Non-alcoholic options, specialty beverages, and bespoke refreshments are given the same attention, never treated as an afterthought.

Food Shaped by the Place It’s Served

A meal here is shaped twice — once by the kitchen, and once by the place it is served in.

Hotel Plaza Herrera sits on Plaza Herrera inside Panama City’s UNESCO-listed historic district, surrounded by the architecture and the centuries that define Casco Viejo. Guests arrive through streets of restored colonial buildings, gather inside a historic mansion, and dine in rooms that still belong to the neighborhood around them. The meal becomes part of something larger than the meal — a few hours inside one of the oldest, most deliberate corners of the city.
